Victoria’s Four Pillars Gin is investing $6 million expanding its Healesville distillery, constructing a ‘gin hub’ adjacent to its current distillery and cellar door at Lilydale Rd.
The new facility will include a bar, events spaces, a German-designed still, a retail space and “a special sensory surprise” the company is revealing little more about at this time. The company will hire around 30 new staff.
“We’ll have room for a sixth copper gin still (made by CARL of Germany, of course),” the company explained on its Facebook account. “Plus we’ll have more room for the bottling, packing and logistics that are all part of the vital job of getting the world’s best gin to you.”
Sustainable-design specialist Breathe Architecture will be overseeing the project which will include solar power supply and waste-minimising features. The project is scheduled for completion in December.
Four Pillars owners Cameron Mackenzie, Stuart Gregor and Matt Jones founded the company in Yarra Valley in 2013. Last year, they opened a store in Sydney and bagged the International Gin Producer of the Year in 2019, followed last year by another at the International Wine and Spirit Competition in London.
