Allis’ Fresh Mex opens fast casual flagship

Boost founder Janine Allis’ latest venture Salsa’s Fresh Mex has opened a new flagship fast casual restaurant in Richmond, Melbourne.

With 24 outlets across the country, the standalone location bridges the gap between fast food and casual dining, providing what Allis describes as “a delicious, healthy and affordable meal in a rustic and inviting setting”.

Inspired by the flavours of the Mexican Baja coast, the menu offer includes burritos, nachos and tacos combined with salsas, fresh guacamole and tangy sauces.

Allis, Salsa’s executive director, says Bridge Rd, Richmond, was calling out for a place to sit back and enjoy some down time.

“As a company we pride ourselves on engaging with diners on a grass-roots level and we look forward to becoming an active member of the local community. In fact, Salsa’s Richmond will employ more than 15 local staff, and where possible, we will source ingredients locally.”

Customers can choose to dine-in or takeaway at Salsa’s, which is adorned with a feature brick wall, custom-designed lighting, contemporary furnishings, a modern kitchen and a mix of indoor and outdoor seating.

The fast casual model of the Richmond outlet is a growing trend in the restaurant sector, promising more complex and made-to-order food flavours, table service and an appealing atmosphere.

Janine notes that the franchising model that found success with Boost is being utilised within Salsa’s, with 18 of the 24 stores owner-operated.

The company plans to sign another 10 leases in the next financial year with a major focus on expanding the model in Western Australia, New South Wales and Queensland.
